I loved oatmeal cookies when I was young, until chocolate chip cookies came along and hijacked my heart. But every once in awhile a warm oatmeal cookie with some vanilla bean ice cream hits the spot. I mean really… 

The cookie originated in England in the 1800s. Since they are high in iron and fiber they were considered healthy so the cookies became very became popular in the US in 1900s. One of the first recorded oatmeal cookie recipes appeared in the Fannie Merritt Farmer 1896 cookbook, the Boston Cooking School Cook Book.
